1 cup finely chopped Swiss chard leaves (remove ribs*)
1 garlic clove 1/4 teaspoon salt 1 cup plain yogurt 1 Tbsp extra virgin olive oil 1 Tbsp freshly squeezed lemon juice A dash of cayenne 3 (9-inch diameter) pita breads, cut like a pie into triangles
Olive oil for drizzling on to the pita bread 1 Bring a 1 or 2 quart saucepan, half filled with water, to a boil. Add the chopped chard leaves. Cook until tender, about 3-5 minutes. While the chard is cooking, prepare a bowl with ice water for an ice bath. When the chard is cooked, strain through a fine mesh strainer and put into the ice bath to stop the cooking. Drain and set aside.
2 Using mortar and pestle, grind the garlic and salt into a paste. In a medium-sized bowl, stir in the yogurt, chard, garlic, olive oil, lemon juice, and cayenne pepper. Set aside.
3 Cut the pita bread into triangles and layout in one layer in a broiling pan (use a sturdy broiling pan, not a cookie sheet or your cookie sheet will warp). Drizzle olive oil on one side of the pita wedges. Use a pastry brush to spread the olive oil more evenly. Place in a broiler. Broil for 5 minutes or until the pita bread starts to toast. Remove and let cool for a minute.
Serve the tzatziki with the pita wedges.

Children's Policy Cooperative of Jefferson County "Building Partnerships to Benefit Children"
How we began...
The Jefferson County Children’s Policy Council (CPC) was established in 1999 as a result of state legislation (All Alabama counties were directed to develop CPCs).* This legislation also mandated that Juvenile Court Judges serve as CPC Chairs and that each CPC conduct an annual Needs Assessment to identify gaps in services to children. In November 2000 under the leadership of Judge Sandra Storm, Jefferson County Family Court hired Susan Cotten as the director for the CPC. Family Court also provided office space, match money and countless in-kind services for the Council. As an unincorporated association, the Jefferson County CPC began holding monthly meetings in February 2001.
The good news: Jefferson County's CPC was assembling an unprecedented gathering of local knowledge and experience pertaining to children’s issues. The not-so-good news: funding from the CPC’s major source of income (Children’s Trust Fund of Alabama - CTF) was in jeopardy. Family Court increased its support of the CPC by contributing the funding that CTF was no longer able to provide.
In 2003, the CPC established an Executive Committee, chaired by Al Rohling of the Alabama Child Caring Foundation, to provide steering and leadership. Chief among the Executive Committee's recommendations was that the CPC form a legal entity that could apply for recognition as a 501(c)(3) in order to receive funding needed to sustain its operation.
In 2004, the law firm Bradley Arant Rose and White, LLP provided pro-bono assistance that led to the incorporation of the Children's Policy Cooperative of Jefferson County (the Cooperative). In March 2005, the Cooperative received notice from the IRS of its provisional status as a non-profit organization exempt from Federal income tax. Caro Shanahan, who at the time served as Director of the Jefferson County Department of Human Resources, was elected President of the Board of Directors. Today...
